Paleo Carrot Cake

Carrot Cake


  • Paleo Nut Cinnamon Muffin Mix
  • 2/3 cup water
  • 1/3 cup melted (and slightly cooled) coconut oil
  • 3 eggs
  • 1 tsp vanilla
  • 1 cup shredded carrots
  • 1/2 cup chopped walnuts (or pecans)
  • 1/2 tsp ground nutmeg


  1. Preheat oven to 375.
  2. Make the Cinnamon Muffin Mix exactly as directed on bag.
  3. Add the nutmeg, carrots, and walnuts and stir until combined.
  4. If making cake, fill two 6 inch cake pans equally and bake for 25-30 minutes or until edges are slightly browned and begin to pull away from pan, or a toothpick inserted into center of cake comes out clean.
  5. If making cupcakes, using a lined muffin pan, fill each cavity with about 1/4 cup of batter. Bake 18-22 minutes.
