Make the Cinnamon Muffin Mix exactly as directed on bag.
Add the nutmeg, carrots, and walnuts and stir until combined.
If making cake, fill two 6 inch cake pans equally and bake for 25-30 minutes or until edges are slightly browned and begin to pull away from pan, or a toothpick inserted into center of cake comes out clean.
If making cupcakes, using a lined muffin pan, fill each cavity with about 1/4 cup of batter. Bake 18-22 minutes.
